Chocolate Chip Cookies

Chocolate chip or chocolate chunk cookies are one of the most popular cookies in the US. This simple and straightforward recipe is the perfect combination to achieve perfect tasting cookies with a crisp edge and chewy center. Chocolate chunks or chips can be used in this recipe.

When I was in college, the cook at my sorority house, Jackie Patterson, made the best chocolate cookies using chocolate chunks. This recipe is the closest I have come to replicating her wonderful cookies.

To make soft but chewy cookies, I used equal parts of unsalted butter and shortening., both at room temperature.

  1. In a medium bowl, combine flour, baking soda and salt.
  2. In a separate bowl using a hand mixer, cream together butter, shortening, brown and granulated sugars. Add eggs and vanilla and combine. Mix with dry ingredients and add chocolate chips and using a wooden spoon combine until fully mixed.
  3. Drop by teaspoons onto a parchment lined baking sheet. Larger cookies will take longer to bake.
  4. Bake in an oven heated to 350 degrees. Bake for 10 to 12 minutes. Remove from oven and cool on baking sheets for 10 minutes. Transfer to cooling rack on parchment paper.
