Chocolate oatmeal cookies are a great option for warmer weather when you don’t want to use your oven.
My mom used to make a chocolate oatmeal no bake cookie that I loved. She hadn’t made them in years and I couldn’t find the recipe in her box of recipes. I reached out on social media to ask if anyone had such a recipe. To my surprise and delight, my friend Janet Wisner generously texted me a copy of a recipe from her husband’s grandmother’s recipe box. I tested the recipe and it turned out wonderfully.
My first time making the recipe, I used Trader Joe’s unsweetened cocoa. The flavor was decent but the color was much lighter than I would have liked. My second go around, I used Ghiardelli cocoa which had much better flavor and color. The oats should be the quick cooking oats, which are smaller and will cook more completely.

Chocolate Oatmeal No Bake Cookies
A fabulous and rich cookie you can make without an oven.

- Line two cookie sheets with wax paper. Measure oats and peanut butter in advance so they can be added immediately.
- In a sauce pan, add sugar, cocoa, milk and butter over medium heat and bring to a soft boil and boil for one minute, stirring throughout. Remove from heat and immediately add vanilla, salt, peanut butter and oats.
- Stir well using a wooden spoon and drop by the spoonful onto lined cookie sheets. Allow to cool and serve.
