Greek Orzo Salad

Greek orzo pasta salad, called kritharaki in Greece, is a refreshing Mediterranean dish that combines rice-shaped pasta with chopped, fresh vegetables and a zesty lemon-herb vinaigrette. This salad is a versatile side dish that pairs well with grilled meats or can stand alone as a light lunch.
