Sausage, Potato and Red Pepper Breakfast Burritos

Breakfast burritos are a highly versatile morning staple, typically consisting of scrambled eggs, a protein like bacon, breakfast sausage or chorizo, potatoes (hash browns or diced), and cheese wrapped in a flour tortilla. Cook tatter tots according to package instructions.  Meanwhile, in a skillet cook sausage over medium heat. Crumble into small pieces. Add bell pepper and onion and cook until softened and meat is browned. Using a slotted spoon, transfer meat mixture into a bowl and set aside.

Whisk together, eggs, milk, salt and pepper. Pour egg mixture into skillet. Cook over medium heat until eggs are almost set. Cook until eggs are set but not dry. Remove from skillet and cut into eight even pieces.

Using a cast iron skillet over medium heat to warm tortillas. Portion tater tots, meat mixture and eggs evenly into each tortilla. Fold over side and fold bottom over filling.

Heat 1 tablespoon oil in skillet over medium low heat. Add two burritos at a time to oil, frying seam side down for two to three minutes. Flip and fry other side.

Serve with prepared salsa and sour cream.
