Lasagna Soup

This soup is one of our family’s favorites. Ready in fewer than 30 minutes, the soup is a perfect weeknight meal. Today, I bought a Take and Bake Italian loaf from Aldi to serve with garlic butter made from garlic powder and roasted garlic from a garlic head I roasted in the oven.

Don’t be intimidated by the list of ingredients. This soup is deceptively simple to make and give the authentic taste of lasagna without all the work.

  1. In a large pot, heat oil. Add onion and cook until softened. Add garlic. After about a minute add ground beef and sausage. Cook until browned.
  2. Add beef broth, crushed tomatoes, oregano, basil, parsley, salt and pepper
  3. Meanwhile, boil lasagna noodles in water a separate pan. Drain and add them to soup mixture.
  4. In a bowl, mix ricotta, grated parmesan and grated mozzarella until thoroughly mixed.
  5. Ladle soup into a bowl and garnish with about ½ cup of cheese mixture.
