Potluck Broccoli Salad

A perfect salad for summer park events and barbeques. Swim team was always a big summer event for kids and families in our little town. Regardless of ability, all local swimmers participated in our municipal teams, unless your family was a member of a private club.

This is a simple salad made with homemade slaw dressing, blanched broccoli flowerets, sunflower seeds, red onion and dried cherries.

Following each home meet, the team families would have a potluck picnic at our local community lakefront park. This salad was a mainstay of potluck salads.

A wonderful summer salad with many possible variations!

Ingredients

Cole Slaw Dressing

Instructions

  1. In a small bowl, prepare slaw dressing. Combine mayonnaise, vinegar and sugar. Mix well.
  2. Boil water in a large saucepan or medium pot. Blanche broccoli for one minute. Remove broccoli from water, place in strainer and rinse with cold water to stop cooking. When water has been strained, add broccoli to a bowl with cherries, sunflower kernels and onion. Pour dressing over mixture and stir to coat.
