Romanian Spiced Stuffed Peppers

Stuffed green peppers are a classic comfort dish typically featuring hollowed-out bell peppers filled with a mixture of ground meat, rice and tomatoes. We have added traditional Romanian spices to our peppers by adding dill and smoked paprika. We cooked them in a cast iron Dutch oven with foil tightly fitted over the top to keep the heat and moisture enclosed to better cook the peppers.

Heat oven to 400°F. Cut off tops of bell peppers. Remove seeds and membranes. Rinse bell peppers. If necessary, cut thin slice from bottom of each pepper so they stand upright. Set aside.

Brown ground beef and onion in large skillet on medium-high heat. Drain fat. Add rice, dill, smoked paprika, garlic powder, salt and pepper; mix until well blended. Mix one cup of crushed tomatoes into meat mixture.

Mix remaining crushed tomatoes with sour cream. Pour 1 cup of the crushed tomato mixture into bottom of Dutch oven. Stuff peppers with beef mixture. Place stuffed peppers upright in baking dish. Pour remaining tomato sauce over stuffed peppers. Cover tightly with foil. Bake for 45 minutes.
