Customize Your Perfect Chili Recipe

I have been making chili for decades and it, like many of my recipes, is always evolving. This recipe is a pared down version of something I tried before and didn’t care for. I had added a dried ancho chili pepper, but the pepper gave a deeply smoky flavor and far too much bitterness for my taste.

For the beer, I used a Guiness Stout I had left over from an earlier purchase. The stout helps give the chili a deeper and richer flavor. The great thing about chili is that it is easily customized based upon what you have on hand.

Chili is great for casual entertaining, football tailgates, watch parties or any cold weather gathering. It can be served with tortilla chips and a number of garnishes

This slow cooker chili can be made in four hours on high or eight hours on low, if you want to cook while you sleep or while you are at work.

  1. In a heavy skillet, brown stew beef.
  2. Cut chocolate into shavings with a sharp knife.
  3. Add beef and any juice remaining in pan to slow cooker with onion, garlic, kidney beans, tomatoes, beef broth, beer, dried peppers, chocolate, chili powder, cumin, oregano, smoked paprika, salt and pepper. Cook on high for 4 hours.
