Cheesy Artichoke Dip for Parties

I was first given this recipe by my cousin’s wife when I was hosting my first Christmas for friends in 1991. This hot artichoke dip is rich and oh-so quick and easy to make with almost no preparation and a quick bake time.

I have taken this dip many places over the years. Once, I took it to a team party given for the people I worked with. The host’s husband literally camped out in front of this dip to eat it.

The rich flavor of the artichokes baked with creamy mayonnaise and sharp parmesan are sufficient to make a tasty dip, but the dip can be varied by adding fresh squeezed lemon juice, garlic or cooked spinach to the mixture before baking.

Heat oven to 350 degrees Dice artichoke hearts. In a casserole, add mayonnaise and parmesan and mix completely. Bake for 30 -45 minutes. Top should be browned and dip should be bubbling. Serve with crackers.
