Pasta Carbonara

One of my favorite movies is Nora Ephron’s Heartburn. In one of the early scenes, the protagonist is hosting the man she will later marry. She goes into the kitchen and comes out with Pasta Carbonara which they share. All she needed on hand was bacon or prosciutto, eggs, pasta, a little white wine, cream and parmesan cheese. I had originally made Pasta Carbonara from the recipe from The Silver Palate, but I never loved it. When I later experimented with another recipe, it added a half cup of wine and made the pasta creamy by adding one cup of reserved pasta water and resulted in the perfectly creamy dish I make today.

A rich 30 minute pasta, which is a perfect meal with crusty bread or a side salad.

Ingredients

Instructions

  1. Put the blanched meat and 3 T water into a skillet. When the water evaporates and the meat starts to brown, drain off all but one tablespoon of fat.
  2. Add oil and garlic to the skillet. Sauté over medium low heat until garlic is golden brown, about 4 minutes.
  3. Stir in the wine to deglaze the pan. Remove the pan from the heat.
  4. In a large bowl, beat the eggs, cream, cheese and ½ teaspoon of salt.
  5. Bring 4 quarts of salted water to a boil and add pasta. Cook until al dente.
  6. Reserve one cup of pasta water then drain pasta. Add pancetta to egg mixture. While pasta is still wet and hot add to pancetta and egg mixture. Stir and add pasta water to form a creamy sauce.
  7. Sprinkle with pepper and serve immediately.
