Chicken, Mushroom and Asparagus Pasta

Asparagus represents spring in most parts of the United States.  Enjoy a fresh burst of asparagus in this creamy, garlicky cream-based pasta. Cook the noodles while you start the sauce and it will be done in fewer than 30 minutes.

Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and onion powder. Sauté until golden and cooked through (about 5–7 minutes), then remove and set aside.

In the same skillet, melt butter and add mushrooms. Cook for 5 minutes until they release moisture and brown. Add the asparagus and garlic, sautéing for another 3–4 minutes until the asparagus is tender-crisp.

Pour in chicken broth to deglaze the pan, followed by the heavy cream, pasta water and Parmesan. Simmer for 3–5 minutes until the sauce begins to thicken.

Return the chicken and cooked pasta to the skillet. Toss to coat evenly, adding reserved pasta water if needed to reach your desired consistency. Garnish with extra Parmesan or fresh parsley.
