Baked Brie with Pickled Peaches

During the summer, when the Michigan peach crop is harvested, I use several bushels of peaches for canning, so I can enjoy these spectacular fruits throughout the season. I make them into pickled peaches, a more unusual option than making jam. The zestyness of the vinegar with the sweetness of the ripe fruit are a welcome complement to soft and salty ripened cheese.

  1. To bake brie, place in an oven safe dish and bake for 20 minutes at 350 degrees or put in microwave for 1-2 minutes. Remove and transfer to a serving plate and top with pickled peaches, diced. Surround with crackers for serving.
