
During the summer, when the Michigan peach crop is harvested, I use several bushels of peaches for canning, so I can enjoy these spectacular fruits throughout the season. I make them into pickled peaches, a more unusual option than making jam. The zestyness of the vinegar with the sweetness of the ripe fruit are a welcome complement to soft and salty ripened cheese.

- To bake brie, place in an oven safe dish and bake for 20 minutes at 350 degrees or put in microwave for 1-2 minutes. Remove and transfer to a serving plate and top with pickled peaches, diced. Surround with crackers for serving.
