
This recipe is great with golden or red skinned baby potatoes. Quick and easy to make! Buttery steamed potatoes are pan fried and complemented with garlicky, creamy fresh tzatziki, feta cheese and fresh dill.
Using a steamer basket in a pot with 1 inch of water, steam potatoes over medium heat for 30 minutes or until a fork is easily inserted into the potato. Remove from basket and transfer to a flat surface, using a fork smash the potatoes one by one.
In a heavy skill, add oil to cover bottom of pan. Heat oil over medium heat. Add smashed potatoes and fry for two minutes on each side. Remove and drain on a paper towel.
Spread tzatzikis over a small plate. Place potatoes over tzatziki. Sprinkle feta and fresh dill over potatoes.
