Lasagna is a popular dish, but the labor involved can be somewhat intimidating. This soup offers all the great taste of lasagna with a much quicker trip to the finish line. It comes together so quickly, you can make it for a weeknight dinner and have all the great flavor of a baked lasagna. You may have extra of the ricotta cheese mix, which is great to use of in stuffed shells.

Don’t be intimidated by the list of ingredients. This soup is deceptively simple to make and give the authentic taste of lasagna without all the work.

- In a large pot, heat oil. Add onion and cook until softened. Add garlic. After about a minute add ground beef and sausage. Cook until browned.
- Add beef broth, crushed tomatoes, oregano, basil, parsley, salt and pepper
- Meanwhile, boil lasagna noodles in water a separate pan. Drain and add them to soup mixture.
- In a bowl, mix ricotta, grated parmesan and grated mozzarella until thoroughly mixed.
- Ladle soup into a bowl and garnish with about ½ cup of cheese mixture.
