Korean Corn Cheese

A cast iron skillet filled with cheesy, baked corn dish topped with chopped green onions.

This is a great hot appetizer to share with a friend or to snack on during a Saturday of college football. The preparation is pretty simple and can be made easily in a cast iron pan. This time, I made it in a Griswold #6 from my collection of vintage cast iron pans.

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine corn, ½ of mozzarella, mayonnaise, sugar, garlic salt, then season with salt and pepper. Scrape mixture into an oven proof skillet and top with remining ¼ cup of mozzarella. Bake for 9-11 minutes on middle rack in the oven. Leaving pan in the oven, turn on broiler and broil until cheese is bubbling and browned in spots. Sprinkle sliced green onions over baked top.
