This delicious tomato chutney aioli is a great accompaniment for many meats and vegetables. It perfectly complimented the pork tenderloin leftover from my pork tenderloin. I made the sandwich by spreading the aioli on the top and bottom bun layering the pork, bacon and Boston lettuce on a buttery brioche bun. You can also use this tasty aioli as a chip dip or a dip for vegetables.

- In a medium saucepan, heat oil over medium heat, add garlic, red pepper and ginger, stirring constantly until fragrant, about 30 seconds. Add tomatoes, raisins, vinegar and brown sugar, stirring occasionally, until raisins are plump and tomatoes begin to break down.
- Remove from heat and let cool, about 30 minutes. Process tomato mixture with mayonnaise in a food processor until smooth, add salt.
