Glazed Pineapple Smokies

Our sweet and savoy Glazed Pineapple Smokies are a widely popular appetizer and made from just four ingredients: Echrich Smoky Links Breakfast Sausage, pineapple chunks, brown sugar and a few tablespoons of vinegar, Smoky links have a treasured place in our family’s memories. Our grandmother used to make them for us in a cast iron pan on her white Roper gas range when we visited her home in Muskegon Heights, Michigan and they were always a special treat. She would wrap two sausages in a paper towel for each grandchild, to prevent greasy fingers from spreading grease through her house.

Glazed Pineapple Smokies marry nostalgia with brown sugar glazed pineapple with a little added vinegar to cut the sugar. This recipe came from my first cousin, Aaron, who is an avid cook and always generous with his recipes.
