My loaded baked potato casserole is the ultimate comfort food, packed with the savory flavors of a loaded baked potato, and is an easy to make and serve a potato casserole to feed a crowd. Any of the ingredients can be adjusted for taste. The casserole uses fresh or frozen shredded hashbrown potatoes so it can be made easily and quickly.

The casserole is made creamy by coating the hashbrowns with cream cheese and milk, seasoned with sautéed onions, salt and pepper.

All of the savory deliciousness of a loaded baked potato made into a casserole to serve a small crowd.

Ingredients

Instructions

  1. Heat oven to 350°F. Butter or spray a 9 x 13-inch baking dish; set aside.
  2. In a 12-inch with skillet melt butter over medium heat. Add onion; cook 2-3 minutes until softened. Stir in cream cheese and milk until mixture is well blended. Add hash browns, ¾ of shredded cheese, salt and bacon. Remove from heat and transfer to prepared dish, seasoning generously salt and freshly ground black pepper. Bake 40-45 minutes until golden brown and hashbrowns are tender. Top with remaining cheese and bake 10 minutes more.
  3. Remove from oven and top with chives. Serve sour cream on the side for guests to add to their serving.
