Easy Shrimp Scampi with Garlic and Capers

Shrimp Scampi is a classic Italian-American seafood dish featuring tender and juicy shrimp tossed in a  light sauce made from garlic, butter, olive oil, dry white wine, capers and fresh lemon juice. The name originates from the Italian word “scampi,” which are tiny, lobster-like langoustines similarly prepared in Italy. When Italian immigrants adapted the dish in the United States, they swapped the rare langoustines for readily available local shrimp but kept both names for this  uniquely American dish..

If you use frozen shrimp for this recipe, be certain to thaw it using a colander under cold water before adding it to your wine sauce.

Instructions

  1. Cook pasta according to package instructions in salted water. While pasta cooks, prepare sauce.
  2. In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine, salt, red pepper flakes and a generous amount of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
  3. Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. Stir in the parsley and lemon juice and serve over pasta.
