- Using a food processor with metal blade, add drained chickpeas, tahini, lemon, garlic and salt. Process until smooth, adding reserved liquid to desired consistency.
- Refrigerate for at least one hour.
- Spread on a shallow bowl or plate. Garnish with olive oil, chopped parsley and toasted pinenuts.
- Serve with fresh pita bread cut into triangles, pita chips, carrots or cucumber slices.
