Quick and Easy Authentic Lebanese Hummus

Once you make this homemade hummus, you may never buy grocery store hummus again. Spread on a plate, hummus may be served as an appetizer and made more visually appealing by topping it with olive oil, fresh chopped parsley and toasted pine nuts. Hummus may also be used as a condiment for fish or meat or spread on sandwiches. It may also be used as a base for a hummus bowl, with protein and fresh vegetables.

This authentic recipe is extraordinarily easy. To firm it up, I refrigerate it before serving, but that step is completely optional.

  1. Using a food processor with metal blade, add drained chickpeas, tahini, lemon, garlic and salt. Process until smooth, adding reserved liquid to desired consistency.
  2. Refrigerate for at least one hour.
  3. Spread on a shallow bowl or plate. Garnish with olive oil, chopped parsley and toasted pinenuts.
  4. Serve with fresh pita bread cut into triangles, pita chips, carrots or cucumber slices.
