Mojitos are a refreshing minty citrus drink that originated in Cuba. This recipe takes the classic mojito recipe and converts it for a pitcher of mojitos that is perfect for easily serving guests at summer gatherings. It may be served with or without alcohol. I prefer to provide rum on the side for anyone who wants a cocktail versus a mocktail. I often serve a pitcher of non-alcoholic mojitos, so it may be enjoyed by guests of all ages.

- On a cutting board, crush mint leaves using a rolling pin to release oils for the syrup. This process can be done between sheets of wax paper. In a small saucepan, stir together sugar, water, and mint leaves. Bring to a simmer over medium heat, stirring to dissolve sugar. Simmer for about 3 minutes. Remove from heat and cool, discarding mint. Chill syrup until cold, about 30 minutes.
- Stir together mint syrup, rum (if using) and lime juice in a large pitcher. Chill at least 1 hour or up to 3 days.
- When ready to serve, gently stir club soda into mixture in pitcher, and add lime rounds and additional mint leaves.
- Serve in glasses over crushed ice with additional prepared lime rounds and mint leaves for garnish.
- To reduce sugar, the amount of syrup can be cut back syrup by ¼.
