Authentic US 31 BBQ Pork Sandwich Recipe

This BBQ pork sandwich recipe was shared with my mother by one of her Muskegon County cousins. Her cousin claimed this recipe authenticates the famous BBQ pork sandwich recipe from Muskegon’s famous US-31 Barbeque.

Opened in 1939, US 31 BBQ is a family-owned Muskegon restaurant which has become a local institution. Although not authenticated, this recipe claims to replicate the pork sandwich from US 31 BBQ and was shared with my mom by one of her cousins, who still lived in Muskegon. This recipe has lots of inactive time while the pork is in the crockpot. Adding the cabbage to the pork is a wonderful and crunchy addition to pulled pork.

  1. Place pork roast in a crockpot. Pour water into crockpot until roast is just covered. Cook on high for 7 hours or until roast will pull apart and shred.
  2. In a large saucepan, mix cabbage with ketchup, relish, mustard, sugar, vinegar and chili powder. Combine with pork, heat for 30 minutes on low and serve on buns.
