Antipasto salad is a vibrant, no-cook salad that can be eaten alone or over a bed of lettuce such as romaine or arugula. A combination of Genoa salami, soppressata, provolone, fresh mozzarella, artichokes, roasted red peppers and olives in a homemade red wine vinaigrette.

  1. Combine all meat, cheese and vegetables in a large bowl and toss. In a small bowl, combine olive oil, vinegar and black pepper. Pour dressing over mixture and toss until coated. Cover and chill prior to serving.
