The supermarket or specialty grocery deli is often a go-to for getting the best sides for a summer BBQ or picnic, but prices can exceed $10 per pound, making feeding a crowd very expensive. Making coleslaw at home using a homemade dressing is significantly more affordable. My Deli Style Coleslaw recipe is a slightly sweet, creamy and savory side dish perfect for summer potlucks, barbeques and picnics. While you could buy pre-shredded slaw, I prefer preparing my own red and green cabbage as it will better retain its freshness which offers added crispness to the salad. I make homemade coleslaw dressing using mayonnaise, white vinegar and sugar for a perfectly tangy dressing. Added to the salad are freshly diced red pepper and carrots.
Cabbage can be cut using a very sharp knife or a mandoline, which can make the cabbage slicing process go very quickly. I purchased pre-shredded carrots because I like their texture.
Coleslaw is a fabulous complement to with grilled meats, and barbecued pork and chicken in particular.

- In a bowl, combine cabbage, carrots and red pepper. Sprinkle salt over contents of bowl. In a small bowl or large measuring cup combine mayonnaise, vinegar and sugar. Pour over cabbage mixture and mix well. Let sit for 1 hour and refrigerate before serving.
