Chicken Quesadillas

Chicken Quesadillas are easy options and loved by eaters of all ages. In addition to the chicken and cheese, add any filling you like but ensure they are covered by cheese to ensure it melts to the top and bottom quesadilla.

Sprinkle salt on chicken. In a heavy pan, heat oil and add chicken. Cook until chicken is cooked through. Add spices and water. Coat chicken with spices and cook until water evaporates.

Warm one tortilla over medium heat in a large, heated pan. Sprinkle cheese evenly over tortilla. Layer chicken and tomatoes over cheese. Top with second tortilla. After about one minute flip tortilla layers to other side, being careful to not spill contents. Warm for another minute.  Remove from pan and cut into six pieces. Repeat with remaining ingredients.

Serve with salsa.
