Chicken Tacos

With the cost of beef rising and no longer as affordable as it once was, chicken is a healthy, tasty and cost effective alternative for tacos. To cook the chicken, I add olive oil, which isn’t needed with beef due to the fat content and season it with my own from scratch taco seasoning with a little extra salt for flavor enhancement.

I start by cutting the chicken into small pieces then season it with salt prior to cooking.

In a heavy pan, heat oil and add chicken. Cook until chicken is cooked through. Add spices and a half cup of water. Stir to coat chicken with spices and cook until water evaporates.

The tortillas are better by being warmed and slightly charred in a cast iron skillet.

Heat a cast iron skillet and warm tortillas on both sides. Pile chicken on tortillas. Add your choice of toppings.
