These cookies are very nostalgic. When I was in elementary school, my mom stayed home for a number of years before she returned to work. During this time, she regularly made cookies for me and my sisters. These peanut butter cookies were among our favorites.

- Preheat oven to 350 degrees. Beat eggs until light and set aside.
- Blend sugars and butter together in a mixing bowl until soft and creamy. Mix in peanut butter. Add beaten eggs, sifted flour, baking soda and salt and combine completely. Using a melon baller, scoop out dough, roll into round large marble sized pieces. Place on a cookie sheet lined with parchment paper. Press each flat with a fork, leaving crisscross design on each cookie.
- Bake 12 to 15 minutes.
- Remove from pan and cool on rack.
