I made these over the weekend for my daughter who is a senior at Michigan State University to honor our “mixed” family (her father and I went to the University of Michigan). Despite the shots being green, I was rooting for the Blue! To avoid unnecessary plastic waste, I made these into a “Knox Shot” by adding unflavored gelatin. If you are making them for a tailgate and want to use plastic cups with lids, you can leave out the additional gelatin.

By preparing these as Knox Shots, you eliminate the plastic waste from the individual cups.

Instructions
- Mix lime gelatin and unflavored gelatin in a bowl. Pour boiling water over gelatin powder and stir to dissolve. Add tequila and triple sec and stir. Pour into 8 x 8 inch glass Pyrex dish. Refrigerate for three hours or until firm. Cut and serve.
