Tomato Chutney Aioli: A Perfect Burger Condiment

Tomato chutney aioli is a creamy, tangy condiment that blends the rich, spiced profile of tomato chutney with the smooth, garlicky base of aioli. 

This delicious sauce may be spread on buns for any type of burger. I used it with slices of my peach chutney pork tenderloin that I wrapped in foil and frozen in a freezer bag. I made the sandwich by spreading the aioli on the top and bottom bun layering the pork, bacon and Boston lettuce on a buttery brioche bun.

The aioli is pulled together quickly. In a medium saucepan, heat oil over medium heat, add garlic, red pepper and ginger, stirring constantly until fragrant, about 30 seconds. Add tomatoes, raisins, vinegar and brown sugar, stirring occasionally, until raisins are plump and tomatoes begin to break down. Remove from heat and let cool, about 30 minutes.

Process tomato mixture with mayonnaise in a food processor until smooth, add salt.
