Have you made a batch of hard-boiled eggs only to have them turn out difficult to peel, leaving you with lumpy and broken apart eggs only suitable for egg salad? To make perfectly eggs that peel perfectly every time, I use the following process.
Place a steamer basket in a large saucepan over one inch of water. Over medium heat, place the eggs in the steamer basket, cover with lid and steam for 15 minutes. Remove eggs from steamer basket and transfer immediately to an ice bath. Peel eggs under cold water to remove all shell.
