- In a stock pot or large sauce pan over medium heat, warm olive oil. Sauté onion, carrots and celery. When vegetables are softened add garlic and brown. Add chicken broth and bring to a boil and add chicken breast and tortellini. Boil until tortellini is cooked. Lastly, add spinach and remove from heat.
